Rectification and temperatures

The master grappa maker’s main task is rectification, or the manual extraction of the noble portion of the grappa. The master grappa maker mechanically separates the tails and heads from the heart, or the «good flavour» of the grappa.

Rectification is only possible with the constant presence of the master distiller during all stages of the distillation process. The head, heart and tail are volatile substances that evaporate at different temperatures, which the master grappa maker has learned to manage with artistry.
